Is Saba the Same as Balsamic Vinegar?
No. Although the two are closely connected through the culinary history of cooked grape must, saba is not simply another name for balsamic vinegar. Saba is prized for its concentrated sweetness and fruit character rather than the pronounced sweet-and-sour acidity associated with balsamic vinegar.
How to Use Saba
Drizzle saba over Parmigiano Reggiano or other aged cheeses, roasted or grilled meats, vegetables, fresh fruit, panna cotta, gelato or other desserts. A small amount can also add depth and sweetness to sauces and savory dishes.
