Medium sized capers harvested and preserved in sea salt. Harvested by hand, every 8 / 10 days from May to September, the farmer returns to the same plant to pick the buds have not yet bloomed. Capers have an intense aroma and taste and unlike other capers are acrid like other herbaceous crops. Capers vary in colour from dark green, to mustard to violet.
